My take on Russian Teacakes.
(makes about 5 dozen)
1/2 cup confectioner sugar
1/4 tsp. salt
1 cup softened butter
1 tsp. vanilla
1 3/4 cup flour
2 tsp cocoa powder
2 Tablespoons finely ground American Pride Roaster’s Franklin coffee
1/4 cup chocolate chips
Preheat oven to 400 degrees.
In bowl, combine flour, salt, cocoa, and coffee.
Cream together butter and sugar in mixer; add vanilla.
Add half of the flour mixture until combined.
Add rest of flour mixture.
Roll into 1″ balls, and place 1″ apart on cookie sheets.
Bake for 8-10 minutes.
Allow to cool; place on parchment or wax paper.
Microwave chocolate chips until melted; drizzle over cookies.
